When is the Gouda cheese market?
Every Thursday morning from early April to late August, from 10:00 to 12:30 on the Markt in front of the Waag, and free to watch. Farmers and buyers still seal deals with a handclap. Book this tour on a Thursday morning in season and your guide explains what you are seeing.
Is the Gouda cheese market real or just for tourists?
Both. It is a re-enactment of the historic trade, staged for visitors, but the handclap bargaining and cheese testing follow the old rules. The cheese itself is made on farms around the town, not in Gouda. Without someone explaining it the ritual is hard to follow, which is where your guide comes in.
